When you cook with wine or any other alcohol: When alcohol added to boiling liquid and then shortly after removed from heat the alcohol retention rate is around 85%. When using no heat and storing overnight, about 70% of the alcohol is retained. When baked for 25 minutes with the mixture not being stirred, the retention rate is 45%. When baked/simmered where the mixture is stirred, the retention is: 35% (when simmered for 30 minutes), 25% (after 1 hour), 10% (after 2 hours).
